Where to go and stay at in the Caribbean?

I am planning a trip for May 12-19 and want to go somewhere in the Caribbean. I am trying to stay around $1,000-$1,400 per person for 2 people. I have never been anywhere in the Caribbean, so I am open to anything. I would like to be on a good size all inclusive resort with plenty of dining options. Other than that as long as the resort is clean and friendly I am good. Any suggestions?
